Minced Meat Kebabs – Shami Kebabs
INGREDIENTS:
* Minced Mutton/Beef (Kheema) less fat 500 gms
* Gram Dhal (Dhal Chana) washed and soaked in water for ½ hour) 1/2 cup.
* Garlic flakes 10 nos.
* Ginger 1 inch piece
* Garam masala 1 tsp.
* Cumin Seeds White ( Sufeed Zeera) 1 tsp.
* Cardamom Large (Bari Elaichi) 2 nos.
* Cinnamon (Darchini) pieces 2 nos.
* Cloves (Lavang) 3 nos.
* Coriander Powder (Dhania powder) 1 tsp.
* Pepper just a pinch
* Chili powder 1 tsp.
* Coriander & Mint leaves (Dhaniya/Cilantro and Pudina) chopped A handful
* Egg 1 nos.
* Lemon juice ½ no.
* Onion 1 nos.
* Salt To taste
* Oil/Ghee For frying
INSTRUCTIONS:
1. Draine the minced meat (keema), add the gram dal chana, whole (sabut) masala, 1 cup
warm water, salt to taste and then cook till dry.
2. Remove from heat and add ginger, garlic, pepper, chili powder, dhania and
zeera powder. Grind to a fine paste and then form into dough.
3. To the minced onion, add the finely chopped cilantro, mint leaves, lime juice and
salt to taste.
4. Beat the egg lightly, add a pinch of salt and put aside.
5. Divide the dough into lemon- sized balls.
6. Flatten each ball in the palm of your hand and stuff with a little of the onion
mixture.
7. Shape into a kebab and dip in the beaten egg. Shallow fry the kebabs till they turn dark brown.
